The grapes used come from the Ornati and Mosconi vineyards in Monforte d'Alba, a village renowned for Barolo. After harvesting, the grapes are rested for several days, allowing them to continue to ripen, softening the tannins, and resulting in a wine that truly expresses the characteristics of Nebbiolo. "El Sartù" means "tailor" in the Piedmontese dialect.

It boasts an impressive concentrated floral aroma. The palate offers cherry and spice flavors, with delicate tannins and a well-balanced taste.
